For example, for starters where do I go to get rid of that "Another Nifty Geeklog Site" thing now that it's no longer in config.php?

In your admin menu, check out the configuration link

Almost everything that used to be in config.php is now available under the "Configuration" admin panel.

There are a few exceptions that went into two new config files, db-config.php (DB settings, in your /path/to/geeklog) and siteconfig.php ($_CONF['path'] and a few others, in your public_html directory).
