$variable_name vs $HTTP_POST_VARS[\'variable_name\']

After re-installing PHP, my php.ini was reset, and my register_globals was also set to off. My site didn\'t work to well, actually pretty bad. After some rewriting of the code , I realized that php.ini was reset. I\'m no PHPhreak, but is it possible to rewrite the code for form variables to $HTTP_POST_VARS[\'variable_name\'] and get the site to work with register_globals set to off in php.ini?
