You can either use phpMyAdmin to edit all of the links in a category, edit them all by hand, or write a script to do this for you. Unfortunately, there is no easy way to edit change the category for multiple links.

I don't see anywhere to "add" link categories....does this have to manually be done manually within the database?!? If so, why hasn't this been addressed since people are going to have more categories than "other" and "geeklog sites".....or....am I missing something?

I'm sure it's in the docs somewhere, but, look at the link submission form again. Specifically the part "If other, please specify:"

You go to the links page, hit create new, there's a section that says "Category:" ...highlight "Other. In the "If other, specify" box just type a new category.:
