Change 'en-gb' to 'da'.

I just change 'en-gb' to 'da'
But still: Thursday, December 11 2003 @ 12:20 AM CET
In my language file is Thursday: Torsdag in Danish.

A quick search on Google shows that the locale for Denmark seem to be 'da_DK', so try that.
