Do you mean the error.log and access.log files? And why would you want to switch that off?
Sure, it could be done by replacing the COM_errorLog and COM_accessLog functions with functions that simply don't do anything, but I don't see the point.
The logging is done to help you track down errors and access violations, so it's in your own best interest.

Logging is a problem when running geeklog on a public system, and the geeklog files cannot be chown'ed or chgrp'ed to the apache user... in that case the directory for logging, backup, etc will have to be world-writeable :-/
