Tableless Design and Question on "Borrowing" Templates

I notice (with dismay) that all the GeekLog templates use tables for their formatting/structure. Has anyone attempted to strip out the table structure, leaving only the PHP code so that formatting via a stylesheet can be implemented? I am thinking about doing that just to see what happens. I couldn't find any discussion of this in any of the forums.
Second of all, my Geeklog site is running a custom theme that is based (loosely) on the GeekLog-supplied template, Yahoo. Should credit be given to the Yahoo template designer in the colophon? Wondered what the protocol is for this. The temptation is great not to "reinvent the wheel" design-wise, and I'm sure these folks want credit for at least their contribution to the overall design.
Just curious. (If these are the only problems I'm having today, I'm having a great day, right?!)
