Is there any way to log what people are searching for? I hope there is because it would help me tailor my site to my users needs. I am currently using a Stats plugin but it does not record the search phrase just that someone has clicked on the search page.

If you have access to your webserver's logfiles, you can get the information from there. For example:
111.111.111.111 - - [01/Mar/2004:00:21:40 -0500] "GET /search.php?query=email+%22site+admin%22&keyType=all&datestart=&dateend=&topic=0&type=all&author=0&mode=search HTTP/1.1" 200 27759 "http://www.geeklog.net/search.php" "Mozilla/4.0 (compatible; MSIE 6.0; Windows NT 5.0)"
In the first example, somebody was searching for "demo". In the second example, somebody searched for 'email "site admin"'.
