How in the world do you configure this thing? I am trying to on the demo but see no where for the admin to change header or content.

Those items are not something you can do from the demo. You have to edit files on the webserver for both those actions.

Configuration options are in config.php in the root directory of the distribution. Themes (to edit header, footer, and other layout stuff) are located in public_html/layout/*.

I'd suggest downloading the current Geeklog distribution and taking a look at the files.
