is it possible to implement a 'go to last unread post' button into the forum/latest new posts page? If so, what files should I be editing to do this?... or am I gonna be looking at having to rewrite huge chunks of code to make it possible?

There already is this kind of feature. Clicking on the little post image in the Last Post column will take you to the last page of that post - as seen on the Centerpage Block or when viewing the index for a specific forum.

Are you referring to the "View New Posts" page?

lol... I didn't even see that icon there, however, yes, it's the "View New Posts" page that I'm referring too... I don't think it should be that difficult to add the goto last new post option should it?

Nope - just follow the logic I use in the block code or on the forum index page.
