I would really like to remove a few of the menu items, and rename a few as well. Some are not useful to myself or my readers and take up space. Some need to be renamed as well.

I have searched every single file in my main directory, and the themes directory. There is nothing. I've stayed up for hours doing this, and even done some searches here and found nothing.

Would someone mind helping me out?

You might want to try searching for "rename" or "menu" or both. That should bring you to, for example, here and here.
