define() vs. $LANG_PL00 = array() -- wats the diff?

I am currently writing a language file for a plugin as I go and was wondering what the difference is between define() and $LANG_PL00 = array()...

I've seen examples where both are used, but I can't tell why or what the diff may be.

Not 100% sure, but I thought that define() only worked with constants, not arrays...

yes, but why not just put all the variables into the array rather than defining constants, or visa versa. I just cant seem to rap my head around the significance of one over the other as far as the language file is concerned.

off i go to study the manual somemore.
