I really should know this, but...

Where do I change the default number of stories that display on the home page? I've got a team of people blogging now, and on a busy day stuff goes off the page fairly quickly.

Where can I change this? Thanks as always.

Try $_CONF['limitnews'] in config.php.

you can find that setting in your config.php file.
look for: $_CONF['limitnews'] = 10;
