Which files to backup when making a backup

Till now I always backup all the files from my server, but I know it is not necessary.

It takes a lot of time and space to backup eversything. SO which files should I backup for each site

I know I have to backup

images folder
custom theme folder
database - all files

anything else??

It can't hurt to have a backup of your config.php.

Other than that, that should be all you need.
