How to change the default time

Hello,
How do you change the default time, which would be the time zone in which the server is located, to your local time zone?
I've looked for this setting in the backend, but couldn't find it, so I'm thinking that there is a file that must be modified.
Any help would be appreciated, thanks.

Canged: // $_CONF['timezone'] = 'Etc/GMT-6'; // e.g. 6 hours behind GMT to +6 to try to get from PDT to EST. The time didn't match up, but it did change, and it's still showing PDT. How would I get it to show EST?
